The story of Theis Evergreen Farm isn't just about land; it’s about a family’s relentless rhythm and a commitment to the soil that has spanned over a century. From the first dairy herds to the vibrant greenhouses of Katie’s Garden, our history is a testament to grit, growth, and the community we serve.

The Early Years: Grit & Self-Sufficiency (1895–1943)

The journey began with Henry L. Theis and his wife, Mayme K. White. Raising seven children on East Wilson Road, the family initially managed a dairy herd—a labor-intensive life defined by early mornings and physical endurance. Seeking a more sustainable path, they moved to a 146-acre farm on Old Batavia Road to focus on crops.

In these early decades, the farm was their lifeblood. The family lived off the land, canning vast harvests and visiting the local grocery store only for staples they couldn’t grow. A turning point came in 1938: after years of relying on workhorses, Henry Sr. retired the team and purchased the farm’s very first tractor, signaling a new era of agricultural innovation for the Theis family.

The Card Table That Started a Legacy (1944–1957)

In 1944, a humble hobby became the seed of a business. Mayme set up an old card table in the front yard to sell the family’s extra harvest. The community’s response was immediate. Following Henry Sr.’s passing in 1947, their son Jim Theis took the helm, transforming that front-yard stand into a thriving local institution.

 

In 1957, Raymond and Anita Theis purchased the acreage that would become Evergreen Farm in Yorkville. They quickly became vital contributors to the regional food supply, earning a reputation for excellence by growing high-quality tomatoes for the Campbell Soup Company and pickles for Del Monte.

Tradition Meets Tomorrow: The Evolution of Katie's Garden (1969–Present)

The Theis family name continued to branch out across Northern Illinois. While Jim, Henry, and Joan Theis cemented the family’s reputation in Maple Park, Steve and Kathy Theis spent decades stewarding the Yorkville acreage. They transformed the land into a premier destination for local flowers and farm-fresh produce.

 

In January 2025, the torch was passed to the fifth generation. Steve’s cousin, Rob Pondelick-Theis, and his fiancé Katie, took the helm. Today, Rob and Katie are blending nearly 80 years of Yorkville tradition with a passionate, modern vision.

From Henry Sr.’s first tractor to the vibrant, modern greenhouses of Katie’s Garden, they remain—as they always have—Rooted in Quality.​​
